Thailand, India, Pakistan, Mexico and Brazil are today among the largest producers of mangoes. Mangoes have a smooth, thin skin that can be greenish, yellowish, or reddish, often with shades of purple, pink, yellow-orange, or red. The flesh is orange or yellow, like that of the peach. While mangoes are sometimes fibrous, the flesh of most varieties is smooth, creamy, sweet and fragrant. The flesh adheres to the stone, which is quite large and flat. The slightly acidic and spicy flavor of mangoes is surprisingly pleasant.
